Links and handles mentioned in this episode: The Compton Bentonville | IG Washington State University Creamery, Cougar Cheese ReFED job post | CAVA job post Salt & Straw Ice Cream Cookbook Billy Shore article | Norimoto Bakery | Adam Richman ig post | D’Romanos Pizza Mango Chicken Sauce ½ cup ketchup ¼ cup rice vinegar 2–3 tbsp brown sugar 1 tbsp honey 1½ tbsp soy sauce or tamari ¼ cup water 1 tsp grated fresh ginger, optional but worth it (or ¼ teaspoon ground ginger) 1 clove garlic, minced, optional (or ¼ teaspoon granulated garlic) Whisk all of the ingredients together in a small bowl before adding the sauce to the pan with the cooked chicken. Depending on how much chicken you're making, you may only need about half of the sauce. If you'd like a thicker sauce, stir together 1 tablespoon cornstarch and 1–2 tablespoons cold water to make a slurry, then whisk it into the simmering sauce until it reaches your desired consistency.
