This idea has been on my heart for quite a while. You need to visit a restaurant with good service to Understand the difference between waiting for someone and waiting upon them. One speaks of passivity while the other is more active and anticipatory or as they say these days Proactive. It is a knowledge about your guest, a familiarity not in a bad way but in with the ability to know what they need when they want it. It is a studying of behavior and needs an active listening over along time where you know those dishes that evoke memory and getting the presentation just right. If you watch Ratatouille the Cartoon this will make more sense. In short a food critic whose reputation has him placed amongst the worst personalities in his filed visits a small restaurant only to find a smart little mouse with a knowledge of his history. The little creature goes on to help prepare a meal that transports the food connoisseur into a childhood experience that completely transforms him. Two verses are shared in this section.
