| 3/11/24 | Ep. 16: Understanding HNE, Biomarkers, and LPO—with Matt Quinn and Dr. Brian Kerley | Introduction We look at a paper about the process of how the fats in seed oils become toxic, and what effects those toxins can have. This paper is a broad overview of the related disease processes, which we will discuss to further understand how one thing can be driving many different disease processes. "The study of lipid peroxidation (LPO) processes has become a rapidly growing field in medicine and biology, based on increasing evidence that LPO is involved in the development of many chronic diseases, e.g. [references removed] (1) Asthma (2) Atherosclerosis (3) Alzheimer's disease (4) Rheumatoid arthritis (5) Burn injury (6) Cataractogenesis (7) Diabetes (8) Endotoxin liver injury (9) Multiple sclerosis (10)Myocardial infarction (11)Organ transplantation (12)Parkinson disease (13)Psoriasis (14)Reperfusion injury (15)Stroke (16)Aging "The obvious involvement of LPO processes in the majority of severe diseases stimulated worldwide efforts to elucidate the mechanisms of their generation. "These efforts are expressed in the exploding flood of papers, conference reports, review articles (see above) and books dealing with LPO. This paper is, therefore, not intended to add to these reviews but rather to address aspects previously overlooked: the dominant role of linoleic acid (LA) in LPO and the application of a combination of modern separation and identification techniques to isolate LPO products. Knowledge of these products provides insight into the mechanisms of their generation and offers a better understanding of the diseases in which LPO is involved." | 2/22/24 | Ep. 15: A.J. Hulbert on the Omega Balance—with Dr. Brian Kerley | Introduction We are honorored to be joined by Prof. A. J. Hulbert, noted zoologist and author of Omega Balance: Nutritional Power for a Happier, Healthier Life. "In Omega Balance, noted scientist Anthony J. Hulbert explains how the balance between [Omega-3 and omega-6 fatty acids] in the human food chain has changed over the last half-century and the very serious negative health impacts this imbalance has created. An imbalance of these omega fats contributes to increased rates of obesity, diabetes, cardiovascular diseases, allergies, asthma, as well as cancer and a variety of other inflammatory diseases. Omega balance is also important for normal brain function, and an imbalance in these fatty acids is associated with depression, mood disorders, and neurodegenerative diseases. Hulbert provides extensive information on the omega balance of different foods and discusses fascinating details about human evolution, dietary changes throughout history, the effect of diet on human development and physiological processes, and more. He investigates the paleo diet of our ancestors and describes the dramatic changes that have accompanied the increased ultra-processing of modern foods. Omega Balance is an essential guide to understanding a significant problem in our modern food chain and will make us rethink the food we eat. https://press.jhu.edu/books/title/12823/omega-balance Amazon link to benefit this podcast: https://amzn.to/49JHXFo This book won a "Best Book" award from the American Book Fest in the category "Health: Diet and Exercise". https://www.americanbookfest.com/2023bbafullresults.html Guest info I was introduced to Prof. Hulbert by Prof. Tom Brenna, our guest in Ep. 5: Prof. Tom Brenna, Omega-3 and Omega-6 in Human Health. | 2/12/24 | Ep. 14: How a Common Asian Genetic Mutation Leads to Chronic Disease, and What to Do—with Matt Quinn and Dr. Brian Kerley | Introduction We look at a paper enlightening what causes chronic disease, in the context of a huge population of people who suffer from the most common human mutation, to the aldehyde dehydrogenase enzyme that detoxifies both alcohol and seed oil metabolites, the ALDH2*2 mutation. We discuss how this mutation is thought to affect the people who have it through the lens of the paper at hand. This was a difficult video for me to edit, as both Matt and Brian share their experiences with the topic we are discussing in their own families. I thought this was excellent, and hope many others can learn from it. | 1/25/24 | Ep. 12: Study: What's Worse—Carbs or Seed Oils? Understanding a High-PUFA Diet—with Dr. Brian Kerley and Matt Quinn | Introduction We're trying something a bit different today. Dr. Brian Kerley and I have found a victim, Matt Quinn. Matt's a smart guy but he's not as immersed in these topics as we are, and so he's going to play our straight man, the every-day guy who can hopefully come to easily-digested conclusions about the papers we discuss. | 1/22/24 | ![]() Ep. 11: Paul Saladino, MD: The Intellectual Journey of a Physician—with Dr. Joshua Durham | We interview Paul Saladino MD about his intellectual journey from being a raw vegan with rotting teeth as a physician's assistant, through becoming the "Carnivore MD", to where he is today. We discuss the training a physician receives in medical school about nutrition, and how he filled that gap with his own experience and research. And how it impacted his health and his ideas about being a physician. Josh Durham, my personal physician, joins me as co-host today to recount his personal health journey as well and how it changed his practice. (He recently quit his job at a large hospital to go independent!) Paul Saladino, MD: https://www.paulsaladinomd.co/ Dr. Saladino's "The Carnivore Code" book: https://amzn.to/47OCjAt Biography of Paul Saladino: I'm a double board certified MD, host of the Fundamental Health podcast, and author of The Carnivore Code and The Carnivore Code Cookbook. I believe in questioning our assumptions about health and nutrition, which makes me controversial in modern medicine. I'm much more interested in optimal health than in dogmatic adherence to a mainstream narrative. I graduated from medical school at the University of Arizona in Tucson, and completed my residency at the University of Washington in Seattle. After residency, I attained a board certification as a Physician Nutrition Specialist. Throughout my medical training, I came to one very saddening conclusion: our Western medical system isn't helping people lead richer lives. Western medicine fails to treat the root cause of chronic illness, and doctors are only taught to treat symptoms with medications, rather than trying to understand the roots of illness. I firmly believe that nutritional choices lie at the ROOT of so many chronic illnesses that western medicine deems irreversible. | 10/26/23 | ![]() Ep. 10: Dalton Graham: How to Induce Fatty Liver—with Dr. Brian Kerley | Dr. Kerley and I are joined by Dalton Graham, a student who found himself in a liver pathology lab at Tulane. He had the interesting idea to test if a high-linoleic acid diet could be shown to produce fatty liver disease at the same time it was causing obesity. The scientists in the lab required a little convincing that this was a worthy experiment, but one day he arrived to find all the materials he need waiting for him. Be careful what you wish for! Find out how it turned out. Graham, D. S., Liu, G., Arasteh, A., Yin, X.-M., & Yan, S. (2023). At first they didn't really get it… I remember when I first finished laying out the mechanisms and why this is needed. Typically at the end of a presentation there are a bunch of questions, and there was just… silence. "They'd never been presented with this idea that lipid peroxidation (or oxidative stress) manifests itself mainly due to this dietary factor—that no one seems to realize because it's so ubiquitous." "These animals that are eating the higher linoleic acid they appear physical slower." "The females that were fed the high linoleic acid, they actually lost a lot of their fur [while under stress]. We couldn't continue the experiment with them." "I don't think they understood the importance of [linoleic acid] in the real world." | — | ||||||

The mental apparatus of the coming generation is developed in utero, and the time to begin supplementation is before conception. A normal brain cannot be made without an adequate supply of w3 PUFA, and there may be no later opportunity to repair the effects of an w3 fatty acid deficiency once the nervous system is formed."
