Cut the sweet potatoes in half lengthwise. Rub the cut sides with a little olive oil, salt, and pepper. Place the sweet potatoes cut-side down directly on a baking sheet. Bake for 45 minutes. Remove from the oven and let rest for 10–15 minutes before serving.
